Still or sparkling with food: pairing water and dishes

Water is part of the service, just like wine. Simple pairing rules.

Still or sparkling with food: pairing water and dishes

In short: sparkling water of medium mineralisation goes with rich and fried dishes, soft still water with fish and salads, and cool still water with spicy Thai food.

Still or sparkling: which water to serve with food?

Bubbles refresh the palate and work well after rich, fried dishes, as though sparkling water were rinsing the fat off your tongue. With delicate food, white fish, seafood, light salads, the fizz competes with the dish and drowns it out, so still water belongs there instead. Serve chilled to 8–12 °C: warm sparkling water tastes harsh, while ice-cold water mutes both the dish and the water itself.

Mineralisation and the taste of the dish

The softer the water, the less it interferes with the food. Icelandic Glacial has a mineralisation of 62 mg/l according to the brand, with almost no character of its own, which is why it is poured alongside fish and wine. A mineral-rich water like Narzan at 2–3.5 g/l does the opposite: it lifts salt and acidity, and with meat or cheese that is a plus. With wine, choose a neutral water, since a salty or mineral note throws the glass off.

  • Soft water does not compete with the dish
  • Mineral-rich water lifts salt and acidity
  • With wine, a neutral water, so the glass is not thrown off

For restaurants

Two listings usually cover the menu: one sparkling, one still. The 0.45–0.5 l glass goes to the dining room, still water in 0.5 l PET goes out with delivery, and staff get an 18.9 l bottle with a pump. A third, pricier water is worth adding when there is a wine list and a high average bill. Work out the order from your covers: multiply guests per day by the share who order water (start at 50%) and by 0.5–0.7 bottles. Restaurants get wholesale prices and scheduled deliveries from us.
